Cooking in Calabria

Calabria with it's beautiful sea cost and mountains set in the background has a wonderful mix of sea and mountain cooking. The cuisine is typical spicy and often is flavored with 'Nduja di Spilinga", an mix of pork and chili peppers that is stuffed into the intestines like salami and then smoked. Wonderful eaten on fresh buttered bread it's also a common ingredient in pasta dishes, most notably "Nduja with Fileja" a fresh home made pasta which is also typical of Calabria.

From its mountains comes the famous "Pecorino del Monte Poro" which has a sweet when fresh and very aromatic and slightly spicy when aged. If you order an appetizer of typical Calabrese flavors fresh pecorino is always a part of the plate.
