The School

International Cooking School Of Italian Food And Wine offers a variety of hands-on cooking courses in Bologna, Italy's Gastronomic Capital. With more than 20 years experience teaching classes in Bologna, these highly-recommended courses are conducted by award-winning cooking teacher Mary Beth Clark, author of Trattoria, and her staff of Italian chefs. You'll learn delicious authentic Italian dishes with emphasis on understanding important techniques that make you a better cook. Together in our cooking school palazzo, we'll make favorite traditional classics, light new-style dishes and heirloom treasures handed down through the generations of Italian families.

Hotel accommodations are included; these lovely hotels are located in the city's center, convenient to museums, historical sites, shopping and restaurants. Transportation is provided by our private driver. All instruction is given in English.

The Classes

 

Our cooking school is in our stunning sixteenth-century palazzo, a private Renaissance palace located in the Historic Center of Bologna. Conducted in a modern professional restaurant kitchen with individual work areas, our hands-on Italian cooking courses are small in size so you fully participate. You always receive individual attention throughout our courses.

We begin in the lively outdoor market, an experience not to be missed! Surrounded by mounds of ripe seasonal fruits and vegetables, seafood, specialty meats and cheeses, you’ll learn how to select the best for our hands-on cooking classes. Each class consists of preparing a full menu from antipasto through dolce, concluding with our wonderful food-and-wine pairing meal.

Included are special private culinary visits exclusively for our school. A wonderful part of our courses are opportunities meeting and learning directly from award-winning Parmigiano-Reggiano cheese-makers, enologists, producers of balsamic vinegar, culatello and other Italian salumi, olive oils and truffle hunters, plus private cooking demonstrations by Michelin-star chefs.
